Egg Stuffed Tomatoes

With this week’s fresh tomatoes and a la carte eggs, you can make these nutritious Egg Stuffed Tomatoes for breakfast or a snack on the go!
Here’s how:


3 tomatoes

3 eggs


Fresh herbs and chives

Optional: toasted bread, crispy bacon bits, grated cheese, red pepper flakes

Prep time:5-10 minutes
Cook time:6-10 minutes

Preheat oven to 450 degrees

Cut the tops off the tomatoes

Remove all the pulp and seeds with a spoon

Slice tiny bit off bottom of each tomato to keep them level

Place tomatoes on baking sheet

Crack one egg in cavity of each tomato

Sprinkle salt and pepper on eggs (optional: red pepper flakes)

Optional: top eggs with grated cheese or crispy bacon bits

Bake for 6-7 minutes for runny eggs, 8-10 minutes for soft set

Remove from oven

Top with fresh chopped herbs, chives, or more pepper/salt to taste

Serve as is or with pieces of toasted bread
