Poppin’ Potato Salad

For those of us unwilling to let go of summer just yet, try using Greens to Grounds box ingredients to make a colorful and flavorful potato salad! Marketing team members May Stearman and Mckenzie Rist whipped up this dish using red potatoes and red onions from last week’s produce box, as well as carrots from the snack box. Red potatoes are the showcased ingredient, but this dish is great for using up whatever you have in your fridge at the time.

What you will need:

3 red potatoes
2 hard boiled eggs
½ red onion
2 carrots
1 teaspoon chives
½ cup mayonnaise
1 pickle or 1 teaspoon relish
1 teaspoon Dijon mustard
Garlic Powder

To cook:

  1. Cut potatoes into 1 inch cubes, boil until tender (about 12 minutes), set aside
  2. Hard boil 2 eggs, dice
  3. Sauté and dice ½ red onion
  4. Peel and shred 2 carrots
  5. Grate one pickle spear, or use one teaspoon relish
  6. Mince 1 teaspoon chives
  7. Mix together all ingredients into the chopped and boiled potatoes
  8. Add in ½ cup mayo, mix
  9. Mix in mustard
  10. Add salt, pepper, garlic powder to taste
